A thin spread of good butter, plus a tiny slice of smoked salmon, a paper-thin slice of red onion, dill or capers (or all four) is my favorite way to serve these. Cream cheese and chives with a slice of cucumber, yes! Diced salmon or beef tartare with horseradish sauce is great. But they also pair especially well with any cheddar, edam or gruyere cheese, and would be great with a very light smear of any blue cheese, or with a very thin layer of good mustard and pastrami or corned beef, like a mini-reuben. Some things would not require or benefit from these wonderful crackers-- for example, bruschetta topping, manchego cheese with membrilla, or most strongly flavored sausages or salamis. But they are so wonderful and unique, you might find yourself searching them out and wishing you could go to Denmark to thank the family that continues to bake them.
